
CANDY CANE ICE CREAM AND HOT FUDGE SAUCE
Growing up, at holiday time I would go to my friend Julie’s house to bake and decorate their tree. they would make dozens and dozens of cookies. I never saw anything like it before. Cookie tins everywhere!! As well as all the cookies, they would make this favorite – Candy Cane ice cream. I was so inspired, not only by the cooking and baking at Julie’s house but also the love and tradition it represented. Everything was so homey and inviting; a place I looked forward to going to because they made me feel loved!
Candy Cane Ice Cream
1 box of Brach’s peppermint candy canes
1 ½ Gallon container of vanilla ice cream
Take the ice cream out of the freezer and leave on counter. Open up all the candy canes and place them in a food processor or if you don’t have one in a plastic bag that can be sealed. In food processor or bag blend or crush until fine powder with very small bits of candy cane left.
By this time the ice cream would be softened. Remove it from the container to a large bowl and add the candy cane powder to the ice cream. Gently mix and fold the ice cream into the candy cane . Try not to over mix , the ice cream deflates. Mixture does not have to be evenly combined. Add back to container and put in freezer overnight to set.
My mom made an awesome hot fudge sauce. Enjoy the chocolaty goodness! If you want to add nuts, chop some up and put in at the end. Walnuts or pecans we be great.
HOT FUDGE SAUCE
- ½ stick butter
- 2 4 oz. package of unsweetened chocolate squares
- 2 cups sugar
- ½ cup heavy cream
- ½ cup milk
- 1 tsp. Vanilla extract (pure not imitation)
- Dash of salt
Melt butter and add chocolate squares. Melt completely and add sugar. Melt again completely and add the heavy cream and milk. Combine and keep on low heat.. You don’t want to scorch the chocolate. Add vanilla and a dash of salt.
