My approach to cooking? I use recipes for inspiration. To me a recipe is a guide, a place to start. My hope is that you will become someone who can walk up to your pantry, find some bits and pieces in there and make a wonderful meal.
Go ahead, substitute ingredients with confidence, add or subtract from a recipe without fear. Some of you may need to change it up because of an allergy, some because you don’t have an ingredient at hand, or because you don’t like a particular ingredient.
No one should be bound by measurements or ingredients, but instead inspired by the combination of flavors the recipe is offering.
A dash of this and a pinch of that will become second nature to you. It takes trial and error but once you learn to trust your instincts and your taste buds, you can enhance any recipe.
Over time you will develop more confidence and cook with assurance that you and you family will have a wonderful meal cooked with love and loaded with flavor, maybe even without using a recipe?
