
Wedge Salad Is Making A Comeback!
Growing up my mom was not the most attentive cook, she had her specialties, but she was a basic Irish/English depression era cook who boiled everything and salt and pepper was the go to spice. I don’t think I ever had garlic until I was out of the house.
Mom would put chicken legs and loads of butter in a cast iron skillet on top of the stove and go watch the “4:30 Movie”. The program was mainly known for theme weeks… like Planet of the Apes, Ben Hur or Monster week and so on. If you wanted to watch a movie you showed up at 4:30 in front of the TV. Kind of like Netflix today. Except you had to tune in and show up on time, there was no recording anything back then.
Halfway through the movie she would get up to turn the chicken legs over to cook on the other side!! I was young at the time but I instinctively knew that you shouldn’t abandon a pan of chicken to go watch a movie!! LOL! Needless to say, the chicken was like rawhide on one side with a bit of edible chicken on the other side. Lesson learned, don’t leave the frying pan!
These culinary delights were always served with an iceberg lettuce salad topped with chopped tomato (funny how a Wedge salad is all the rage now, we even pay for them in restaurants ) and a baked potato, loaded with butter. Now you get why I love butter so much.
Here are two versions of the Wedge salad:
For the salad dressing I prefer homemade salsa (see link below) but jarred is fine too in a pinch. So if you have to, just buy your favorite salsa. Here is my favorite salsa recipe.
MEXICAN WEDGE SALAD
Ingredients
- 1 head of Iceberg lettuce
- 1 can black beans
- 1 can corn
- 1/2 small red onion, chopped fine
- sliced Jalepenos, diced fine
- 1 cup Shredded cheddar cheese from a block
Instructions

In a bowl, combine all the toppings ( except the cheddar cheese with the Mexican Salad dressing and spoon over the wedges.

Top with the shredded cheddar cheese .
Mexican Salad Dressing
Simple dressing made from good salsa and a secret ingredient!
Ingredients
- 1 cup salsa
- 2 tablespoons good mayo Secret ingredient!
Instructions

whisk together until smooth, add salt to taste.
Wedge Salad
Ingredients
- 1 head of Iceberg lettuce quartered then each quarter cut half
- 1/2 a package of Bacon cooked until crisp, drained then crumbled
- 1 Tomato diced small
- ½ Small Red onion diced very fine ( I place a small bowl with enough red wine vinegar to cover and 1 tsp of sugar or a packet of Stevia we are basically pickling the onion. Let sit for 10 minutes then drain. You can skip the pickling part and just add to the wedge as is, but the sweet pickled onion adds a great flavor to the salad.) I love these extra little surprises!
- Pumpkin seeds also called Pepitas they come roasted and salted- so good!
- Shaved fresh Parmesan cheese I use a veggie peeler to shave off of cheese

Sprinkle each wedge with the above ingredients and drizzle your favorite dressing on top or make your own which is much healthier and super easy to do. (No preservatives or chemicals either!)

You could also add dried cranberries or chopped nuts, blue cheese or creamy goat cheese or chopped hard boiled skies the limit!
