Mango Kale Quinoa and Avacado Salad

Delicious combination of fresh kale and sweet mango mixed with the creamy avacado and tart red onion.  The perfect salad bite!  You can substitute the kale for a nice spring mix too.

Servings 4

Ingredients

  • 1 bunch kale stems removed and chopped into small pieces
  • 1 ripe mango sliced into bite sized pieces
  • 1 ripe avacado sliced into bite sized pieces
  • 1 red onion chopped fine
  • 2 cups cooked quinoa - cooled

Instructions

  1. Remove Stems from Kale by ripping the leaves off the spiny stem and chop kale into small pieces.  Place kale in a nice serving platter or large bowl and layer the rest of the ingredients on top, dispersed evenly over the kale.  Drizzle with dressing and serve.
