Seed and chop cucumber into small pieces and put in bowl. Blot cucumbers with paper towel to get rid of some of the moisture.
Put cilantro, onion, garlic and red pepper in a food processor and process until fine (or chop fine)
Add mixture to cucumber . Add salt, vinegar, oil and hot pepper flakes to your liking,
Martha Tip: take a spoon and scoop out seeds of cucumber (they can cause gas and indigestion)
Serve with Gluten Free corn chips.
