Southwest Salad with Fresh Salsa Dressing

Fresh, crunchy salad made with avacado, corn, Black beans, arugula, rice and fresh tomato.

Enjoy!

Servings 6

Ingredients

  • 1 whole cucumber quartered, seeded and sliced
  • 1 can black beans, drained and rinced
  • 1 can corn, drained
  • 1 cup packed Arugula, roughly chopped
  • 1 medium tomato, chopped
  • 1 ripe avacado, chopped
  • 1/2 red onion, chopped fine
  • 1 cup cooked rice, brown or white

Salsa Dressing

  • 1/2 cup fresh or jarred salsa
  • 2 Tbl mayo

Instructions

  1. Add the first eight ingredients above together in a bowl. 

  2. Whisk the salsa and the mayo together until nicely combined.

  3. Pour salsa dressing over salad and toss to coat. 

  4. Cut up avocado separately and serve with a squeeze of lime juice on it to keep it fresh. 

  5. Put salad in a bowl and top with avocado! enjoy!
