Quick Thai Coconut Curry Sauce

Delicious flavors here- Red Curry, Coconut milk, lime, sweet onions....nothing not to love!

Ingredients

  • 2 13.5 cans Coconut milk
  • 2 15.5 cans Chickpeas Chicken or Shrimp can be substituted
  • 2 tbl Red Curry Paste
  • 1 lime juiced
  • salt and pepper to taste
  • 1 small onion chopped
  • 1 tsp sugar or Stevia packet
  • 1/2 bunch Basil, fresh chopped- optional
  • 1/2 medium red or yellow pepper sliced in thin pieces

Instructions

  1. Saute the onion until soft, add all the rest of the ingredients. 

  2. You can use whatever color pepper you like and cut how ever you wish.

    This is an easy flexible dish...

  3. Heat thoroughly and serve over rice.  If you like more curry flavor please add more to the mixture.
