Cucumber Salads!
Especially in the summer I like to serve this cucumber salad. If you are serving hearty burgers or sausages on the grill this light side salad gives a nice balance to your meal. I use a Mandoline to slice my cucumbers super fine but you could also use a knife to slice the cucumbers to your liking. My Mandoline slicer is one of my most used kitchen tools I have. I slice tomatoes, potatoes, celery, carrots, cucumber and onion. I even sliced ham the other day. If you are interested in purchasing one I attached the link for the one I use. You can get it through Amazon. (Affiliate Link) So much quicker!! My daughter happens to like her cucumber slices thicker so make it your own! Mix it up with these two delicious salads.
Martha Tip: The cap of the vinegar bottle is equivalent to 1 tablespoon. If you are ever caught without a measuring spoon out in the wilderness or something. 🙂
Pickled Cucumber and Red Onion Salad
This cucumber salad is tart and sweet. The perfect side dish to any meal.
Ingredients
- 1 cucumber sliced super thin
- 1/2 red onion finely chopped
- 1 tsp suger or a packet of Stevia
- 3 tbl red wine vinegar or apple cider vinegar
- salt and pepper to taste
Instructions

Combine all the ingredients in a bowl and let set for a good 15 minutes before serving. Tasty!!
Sesame Cucumber Salad
This is a delicious sesame version of the cucumber salad. Light and refreshing.
Ingredients
- 1 tsp sesame oil
- 1 tsp sugar
- 3 tbl apple cidar vinegar
- 1/4 cup cilantro chopped fine
- 1/2 cup red onion sliced super thin
- a few shakes of red pepper flakes
- 1 cucumber cucumber sliced thin
Instructions

Mix first 3 ingredients together in a bowl to combine. Add red onion, cilantro and cucumber to liquid and toss to coat. Finish with salt and pepper to taste and red pepper flakes, toss again and let sit for 10 minutes before serving.
