
Mango, Quinoa, Kale and Avacado salad
I loved this salad. Easy to prepare and hearty enough for a main course. The Quinoa packs the protein in. You could also add grilled chicken to this.
I gave kale a chance and I’m glad I did . It’s a super food as far as health benefits. One cup of chopped kale contains just 33 calories, calcium, vitamin A, vitamin C, and vitamin K .
Mango Kale Quinoa and Avacado Salad
Delicious combination of fresh kale and sweet mango mixed with the creamy avacado and tart red onion. The perfect salad bite! You can substitute the kale for a nice spring mix too.
Ingredients
- 1 bunch kale stems removed and chopped into small pieces
- 1 ripe mango sliced into bite sized pieces
- 1 ripe avacado sliced into bite sized pieces
- 1 red onion chopped fine
- 2 cups cooked quinoa - cooled
Instructions

Remove Stems from Kale by ripping the leaves off the spiny stem and chop kale into small pieces. Place kale in a nice serving platter or large bowl and layer the rest of the ingredients on top, dispersed evenly over the kale. Drizzle with dressing and serve.

Tart Vinegar and Mustard with Sweet honey and smooth olive oil combined with garlic to make a delicious dressing.
Ingredients
- 2 tbsp apple cider vinegar or red wine vinegar
- 1 tbsp good mustard I like Dijon or whole grain (just not the yellow hotdog mustard)
- 2 tsp honey or a packet of Stevia
- 1 small garlic clove minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup good oil

I put all the ingredients in a glass jar with lid. Mine came from the recycling bin :)but a mason jar with lid would work well too.
Shake all ingredients to combine and pour over salad.
