Roast Red Pepper, Kielbasa and Bread With Infused Oil For Dipping
I try to always have a few things on hand for a great last minute appetizer.
- Loaf of bread in freezer or dinner rolls
- Jar of roasted red peppers in pantry
- Package of kielbasa in freezer
- Hunk of good cheese and crackers
- Stone ground mustard mixed with favorite berry jam
- Jar of olives
I love to serve the roasted peppers with crusty bread ( GF for me) , good cheese, crackers (GF for me) , olives and Kielbasa , caramelized to perfection. Here is how I put it together.
- Package of Kielbasa
Slice your Kielbasa and put in the frying pan, no oil needed. Over medium heat fry the Kielbasa until they turn this yummy color. Stir occasionally.
The stone ground mustard mixed with jam is a great dipping sauce for the Kielbasa. schmear some on a piece of cheese and cracker too!
- Approx. 3 tbls stone ground mustard or whole grain mustard (just not yellow)
- 2 tbl favorite jam
Make more or less as needed. 🙂
Now for the peppers, you can roast your own or buy jarred and slice in strips.
Here is how to roast your own:
- Put the pepper right on the flame, keep rotating until blackened.
- Remove from heat and put in a paper bag, roll up and let sit for a minute or two to steam the pepper.
- Take the pepper out of the bag and scrape off the charred bits.
That’s it!
Bread With Infused Oil:
Loaf of yummy bread or rolls pulled apart into bite sized pieces.
Olive oil
Herbs and spices.
Salt
Take a cup or so of olive oil and add to it any spice you like. Put in jar that can be shaken and covered.
- Garlic powder, oregano, basil, hot pepper flakes, salt (you just wing it, a shake or two of each)
Take the back of a metal spoon and crush the herbs in the oil, cover for a bit to let the flavors come out. Pour some in a shallow serving bowl, better for dipping. Add more when needed.
I tell you this can’t get simpler. It is what everyone wants deep down, bread dipped in luscious flavored good olive oil. You will want to double you dipping oil recipe… this gets gobbled right up.
Put it all in your favorite dishes and enjoy!
