Shrimp Quesadillas with Spicy Roasted Jalapeño Sauce
I love to make quesadillas and cook them on the grill. The cheese melts and the tortilla gets just the right amount of char on the edges to give it that delicious smokey flavor. Its a little tricky and takes a steady hand to flip them without loosing all the insides to the grill. One tip, spray the outside of the top tortilla and the bottom tortilla so they don’t stick when grilling. I also rub the grates with a potato…supposed to help with sticking but who knows?? Does that really work?? 🙂
Shrimp Quesadillas With Spicy Jalapeno Sauce
Shrimp Quesadillas with melted cheese and corn topped with a delicious spicy jalapeno sauce!
Ingredients
- 12 6" tortillas Gluten free or regular
- 1 Can Mexicorn
- 1 sweet onion finely chopped
- 3 cups shredded mexican blend cheese
- 1 bag 31 count raw shrimp-devained and shelled saute, cool and chop
- 1 jar favorte salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 head cilantro chopped
- salt and pepper to taste
- spray oil
- splash white wine optional
Instructions

Spray fry pan with some oil and saute shrimp until they are opaque. Finish with a splash of white wine to deglaze the pan. Let shrimp cool and then chop.

Spray the tops and bottom (outsides) of tortillas and place on a flat surface, oil side down. Combine all the cheese, spices, corn, cilantro , onions and cooked chopped shrimp in a bowl to toss. Divide the mixture between the 6 tortillas then sprinkle a little salsa on each one and place the remaining 6 tortillas on top of the mixture with the oil side up.

Carefully place each tortilla on the preheated grill. check often, when starting to brown place your hand on the top of tortilla and with a spatula carefully flip. Close lid and let cheese melt. Keep an eye it so they don't burn but just get a little charred!

To make the Spicy Jalapeno Sauce... Take 2 Jalapeno's and roast them on grill or gas flame until charred. Place in a paper bag, roll up to close and let steam for a few minutes. Remove, scrape off skin, open and take seeds out . Be careful not to touch your eyes!!
Place in food processor with 1 bunch cilantro, 1 clove garlic, salt, a spec of sugar , 1/4 cup olive oil and 3 tbs mayo. Blend together , scrapping down the sides. Add 2 tsp lime juice and a little water or broth to thin to the consistency you like, stir and enjoy! Spicy and delicious!
