
Tonight We Had Salad- Mexican Salad with Chicken, Avacado, Corn and Beans
Almost every night my daughter sends me a text: “what’s for din”? I respond with some mouth watering explanation of what I am cooking that night but sometimes we just make a big Mexican salad for dinner. I love Mexican flavors. Cilantro, lime, cumin, chili powder and the list goes on. For 20 plus years I have been using Mrs. Dash to season meat and dishes. Life got even better, they came out with a million different spice combo’s. The one I used tonight is called Fiesta Lime. I sprinkled it on raw chicken breasts to marinate them.
I cooked the breasts in a sauté pan but you could also grill them. I cut them in half lengthwise then into small pieces.
You can use any type of lettuce that you have in the fridge. We topped ours with black beans, corn, red onion (chopped fine), hard boiled egg’s, avocado and my Mexican Salad Dressing. ( You totally can use jarred salsa, not as good but tasty still) Next, I like to take tortilla chips and crumble them up over the top for some crunch. Everybody in the family LOVES this salad. Simple yet delicious!
If you have Doreen’s Bean Salad in the fridge put that on top instead of the black beans and corn.
