Cream of Broccoli Soup
Last night I made a batch of Cream of Broccoli Soup. Turned out great. We had an abundance of broccoli in the fridge (have no idea why?) so I thought soup was the perfect answer. Give it a try!

Cream of Broccoli Soup
This is a simple, delicious, creamy soup the whole family will enjoy!
Ingredients
- 4 cups chicken broth or vegetable broth
- 1 cup half and half cream
- 1 cup milk- 2 % or Whole
- 2 medium garlic cloves crushed
- 1 stalk celery rough chopped
- 1 large sweet ,white onion, rough chopped
- 8 cups loose packed broccoli choped
- 1 tsp salt
- pepper to taste
- 3 tbl butter
Instructions

Add the first 7 ingredients to a large pot with lid. All the ingredients can be rough chopped because we are going to blend them all together in the end, so don't worry about being perfect with the knife cuts!! Bring contents of pot to a boil then turn down to a low simmer. Cover and simmer until broccoli is tender about 10-15 minutes.
Add Salt and pepper and taste to adjust seasoning. Use a stick blender and put it right Into the pot. Blend until creamy. If you use a blender , ladle hot liquid into the blender but no more than 1/2 way. You don't want the liquid to splatter on you!
When blended, add the butter and stir. Adjust seasoning to your liking adding more salt and pepper if needed.
I absolutely love my stick blender. It is so much easier than using a blender. It is one of my most go to tools in my kitchen. Ya gotta get one! I am attaching the Amazon link to the one I have, here.
