
Southwest Salad With Salsa Dressing
Here we are, it’s “Meatless Monday”. My family is trying to eat less meat both for health reasons and for humane reasons. When we do eat meat I am trying to purchase the best quality meat I can find and afford. Unfortunately the “good for you stuff” often costs a fortune. You have to shop around and just do what you can.
We thought it would be fun to pick a day of the week and always have a meatless meal that day. Hence “Meatless Monday”. Tonight I made a tasty Southwest salad and my Salsa Dressing, ( I use Fresh Salsa here but you could use your favorite Jarred salsa too) add fresh avocado and top with a squeeze of lime juice. Fresh, Crunchy and filling!
I also made some sweet potato fries in my “Air fryer” I just purchased. You could also just bake a sweet potato or regular potato and serve it along side your crunchy Southwest Salad. Fries can also be baked in the oven… just toss with a tablespoon or two of oil and pop them in a 400 degree oven for 30 or so minutes… checking on them often even turning half way through to get both sides nicely browned. Add salt and pepper to taste!

Southwest Salad with Fresh Salsa Dressing
Fresh, crunchy salad made with avacado, corn, Black beans, arugula, rice and fresh tomato.
Enjoy!
Ingredients
- 1 whole cucumber quartered, seeded and sliced
- 1 can black beans, drained and rinced
- 1 can corn, drained
- 1 cup packed Arugula, roughly chopped
- 1 medium tomato, chopped
- 1 ripe avacado, chopped
- 1/2 red onion, chopped fine
- 1 cup cooked rice, brown or white
Salsa Dressing
- 1/2 cup fresh or jarred salsa
- 2 Tbl mayo
Instructions

Add the first eight ingredients above together in a bowl.

Whisk the salsa and the mayo together until nicely combined.

Pour salsa dressing over salad and toss to coat.

Cut up avocado separately and serve with a squeeze of lime juice on it to keep it fresh.

Put salad in a bowl and top with avocado! enjoy!
Toss all the ingredients together, add the Salsa Dressing and enjoy!
